Chef Roger’s Famouse Apple- Butter Muffins

These apple butter muffins are heavenly on a cold snowy winter day.

They make a great dessert or breakfast time snack.

I would also suggest serving them during the holiday season; Thanksgiving and Christmas especially.

Ingredient list:

¾ cup wheat flour
¾ cup white flour
1 tablespoon baking powder
1 /4 teaspoon salt
1 teaspoon cinnamon
3 tablespoons sugar
1 cup all- bran cereal
½ cup skim milk
2 egg whites
3 tablespoons vegetable oil
11 ounces homemade or commercial apple butter
1 unpeeled medium apple cut in 12 wedges

Preheat oven to 400 degrees.

Stir together dry ingredients to form a flour mixture, and then add your sugar.

Combine cereal and milk. Let stand 2 minutes or until soft.

Add egg whites and oil to the cereal. Beat well. Stir in apple butter.

Add flour mixture, stirring just combined. Batter will be lumpy.

Divide evenly into 12 large muffin cups, greased or papered.

Stick an apple wedge into each.

Bake for about 25 minutes, or until lightly brown and a toothpick comes out clean.

• In place of apple wedges, add chopped apple (and nuts, if wanted) to mix.

Tip:

This is a great recipe to practice the toothpick trick.

If you are unfamiliar, simply insert a small wooden tooth pick into the center of your baked goods.

If the toothpick does not come out clean, then continue to bake in the oven slightly longer.
