Cranberry Orange Oatmeal Cookies


1 1/2 cups whole wheat pastry flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 c chopped walnuts

3/4 c dried cranberries

1/2 tsp cinnamon

1/2 c Splenda for baking

1 c old-fashioned oats

3 tbsp sugar

1/2 c unsweetened applesauce

1/4 c canola oil

1 tbsp grated orange zest

3 tbsp orange juice


1. Whisk flour, powder, soda, salt, and cinnamon in a large bowl. Stir in oats, walnuts, and dried cranberries.

2. Whisk Splenda, applesauce, oil, orange zest, and juice until smooth.

3. Make a well in the dry ingredients and pour in the wet ingredients. Mix until well blended. Cover and chill 30 min.

4. Preheat oven to 350. Line a baking sheet with parchment paper.

5. Put the 3 tbsp of sugar in a bowl. With floured hands, roll dough in 1 1/2 in balls, then roll in sugar. Place 2 in apart on baking sheet.

6. Bake until barely golden, about 12-15 min. Cool for 1 min., then move to wire rack.
