Diner: Recipes: Black Bean and Corn SaladIngredients:
1 can (15oz) black beans, rinsed and drained
2 cups corn
2 jalepeno peppers, seeded and chopped
1 (15 oz) can tomatoes, chopped
1 onion, chopped
2 cloves garlic, minced
1/4 chopped, fresh cilantro
2 tbsp lime juice
1 tbsp olive oil
zest of one lime
1 1/2 tsp chili powder
1 1/2 tsp ground cumin
1 tsp paprika
1/2 tsp ground coriander
1/4 tsp salt
1/4 tsp pepper
1. In a large bowl combine beans, corn, pepper, tomatoes, onion, garlic and cilantro.
2. In a small bowl mix oil, juice, chili powder, cumin, coriander, paprika, salt, pepper, and zest.
3. Pour over salad and mix. Refrigerate for 1 hour so flavors will blend.
