Recipe: How to make Cranberry Oatmeal PancakesI love the combination of cranberry and orange together; these flavors complement each other perfectly.
I put them together in pancakes, muffins, cookies, breads, and even salads.
These pancakes are a great way to start the day, and are packed with nutrition.
They are loaded with heart-healthy oatmeal and antioxidant-rich cranberries.
I serve them with sugar-free syrup to make them even healthier(30 cal per 1/4 cup compared to 200 cal. for reg. syrup).
1 c
old-fashioned oats. 1 c whole wheat flour
1/4 c all-purpose flour
3 tbsp brown sugar
4 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
1 tbsp orange zest
1/2 tsp almond extract
2 lg eggs
1 c orange juice
1/4 c milk
1/4 c canola oil
1 c dried cranberries
1. Combine oats, flours, baking powder, sugar, cinnamon, nutmeg, and salt in large bowl.
2. In med. bowl combine eggs, juice, milk, oil, zest, and extract.
3. Add wet ingred. to dry, being sure not to overmix.
4. Fold in cranberries.
5. Cook on electric griddle or stovetop.
